Highlight #1: Caught and Cooked by the Fisherman – Unmatched Freshness
“Yushige” is run by an active fisherman operating the shirasu fishing boat “Yushigemaru.” Every morning, the owner himself sets sail from Shibasaki Port to catch whitebait and local fish.
The shirasu is caught using a unique method called Issou-biki (single boat towing), rare even in the Shonan area. This quick five-minute trawl ensures the shirasu remain translucent and incredibly fresh.
The just-caught shirasu is then boiled with only natural salt, without any additives. The result? Soft, delicately salty morsels that go perfectly with rice.
