Even on weekdays, their parking lot fills up before opening, and on weekends, long lines of cars form.

1. The Perfect Harmony of Flavorful Handmade Soba & Rich Dipping Sauce

Wakana’s soba is a thin-cut “Nihachi Soba” (80% buckwheat, 20% wheat).
It has a smooth texture and a firm bite, making it a must-try for soba lovers.
Their dipping sauce is also perfectly balanced!
One of their most popular dishes is the **Kamo Seiro (Duck Soba) – ¥1,600**.
The rich duck fat and the natural sweetness of the green onions blend into the broth, making it the **perfect pairing for the soba**. Each bite is incredibly satisfying.

Wakana is located in a **breathtaking setting**, overlooking the **terraced rice fields of Hayama**.

Right in front of Wakana, you’ll find a **selection of fresh, locally grown vegetables** for sale.
During a previous visit, I picked up some **fresh bamboo shoots**.
The restaurant owner kindly shared a **simple recipe**, explaining that no pre-soaking was needed.
Thanks to that, I was able to cook a delicious **bamboo shoot rice dish** at home! 🍚✨

These vegetables are so popular that even **locals** regularly stop by to buy them!

✔ Strollers are welcome, but it’s recommended to fold them during busy hours.
