Hayama has its fair share of impressive culinary spots, but the standout ramen shop, “TOKYO BAY FISHERMAN’S NOODLE Hayama” (TBF), is an experience you won’t forget.

Since its grand opening in August 2023, TBF has gained popularity through TV appearances, sometimes attracting lines that stretch up to 300 people! What makes this place stand out beyond the media buzz, though, is the dedication of its owner—a fisherman and ramen enthusiast—and the irresistible flavors of its carefully crafted clam broth ramen.

Let me take you through the story of TBF and its unforgettable flavors.

How the Story Began: A Ramen Journey with Purpose

Katsuma-san’s story is one that captivates anyone who hears it. Originally from Kansai, he had a successful career as a graphic designer. However, his love for Hokusai’s ukiyo-e paintings led him to visit a friend in Hayama. The moment he saw the sea and Mount Fuji, which resembled Hokusai’s iconic landscapes, he felt an undeniable pull—“Mount Fuji is calling me,” he thought—and made the bold decision to relocate.

Determined to build a life around the sea in Hayama, he acquired a boat and embarked on a new journey, establishing a ramen shop as the foundation for his livelihood in the food industry.

“As a Kansai native, I was looking for a ramen style different from the thick, heavy flavors of Kanto’s Iekei and Jiro-style ramen—something with a richer, dashi-based broth,” Katsuma-san recalls. It was during this search that he discovered the original TBF shop in Yokosuka.

Deeply impressed by the umami-rich broth he had been seeking, he became a frequent visitor, and his passion did not go unnoticed. Eventually, the original owner recognized his dedication and granted him the opportunity to open the Hayama branch as a noren-wake (franchise-style) establishment.

Interestingly, Katsuma-san still teaches design once a week at a university in Kobe. Additionally, he has recently purchased a traditional kominka house in Hayama, where he is launching an exciting new project.

Interior Charm: A Coastal Atmosphere

Step inside, and you’re greeted by an impressive large aquarium filled with various fish. The highlight? Two small sharks, delivered as a fun gift by a local fisherman from Manase. Kids love it, and even adults can’t help but be mesmerized.

The walls are adorned with fishing gear and marine-themed decor, giving the space a laid-back, coastal vibe. For ocean lovers, this place is pure heaven.

Signature Dishes: Shio and Shoyu Ramen

The two signature ramen options—Shio Ramen (1,200 yen) and Shoyu Ramen (1,200 yen)—are staples on the menu and a must-try for any visitor.

Every morning, the team uses 18 kg of honbinos clams and 4 kg of asari clams, sourced from Tokyo Bay, to create a flavorful broth. The clams’ rich umami blends seamlessly with the medium-thick curly noodles, offering a taste that keeps customers coming back for more.

Last time, I tried both the Shio and Shoyu ramen, and they were bursting with clam flavor. This time, I decided to explore their other signature dish—the Shoyu Mazesoba (1,350 yen). Trust me, it’s worth every bite!

The Shoyu Mazesoba combines the rich essence of clam broth, soy sauce, and melted butter. Every twist of the noodles brings you a perfect mouthful of flavor, making this a must-try dish for any ramen lover.

Signature Toppings: Attention to Detail

The toppings at TBF are chosen with care to enhance the flavors of the ramen. Here are some highlights:

  • Edo-na Greens: A specially cultivated komatsuna variety from Chiba Prefecture, offering a crisp texture and subtle flavor.
  • Low-Temperature Roasted Pork: Slow-cooked for 6 hours, then lightly seared with a blowtorch for added depth and aroma.
  • Himetake Bamboo Shoots: Crunchy and delicately seasoned to pair perfectly with the broth and noodles.

The staff highly recommended adding shredded white scallions and dried seaweed as toppings for the Shoyu Mazesoba. I’ll definitely try this combo next time!

And let’s not forget the must-try side dish—the Clam Ginger Rice (300 yen). The rice, cooked with rich clam broth, is perfectly complemented by the restaurant’s original ginger sauce, creating a harmonious balance of flavors. Every bite was an absolute delight!

The Owner’s Vision for Local Seafood

Another dream of Katsuma-san is to incorporate seafood caught in Hayama into the menu. Currently, the restaurant mainly uses shellfish from Tokyo Bay and off the coast of Chiba, but he shared his aspiration, saying, “One day, I want to serve seafood sourced directly from Hayama.”

This vision reflects his commitment to making the most of the region’s natural bounty and sharing it with visitors.

A Heartwarming Initiative: Hayama Kids’ Gourmet

Beyond serving delicious ramen, TBF is dedicated to supporting the community through their “Hayama Kids’ Gourmet” initiative. This heartwarming project ensures that children in need can enjoy a bowl of ramen for just 100 yen, with no questions asked.

A sign on the shop’s wall reads, “If you don’t have money now, don’t worry. You can pay when you grow up.” It’s a touching reminder of the shop’s commitment to kindness and community.

Family-Friendly and Dog-Friendly Atmosphere

Parents with young children can feel at ease here. The restaurant has baby chairs available, and the terrace seating offers a spacious option for families. Note that strollers may need to be parked outside as indoor space is limited.

Dogs are welcome on the terrace! With Morito Beach just a 2-minute walk away, many visitors stop by during their stroll. In winter, the terrace is equipped with heaters and kotatsu for a cozy experience.
