Today, we introduce HAYAMA SHINNASE CELLAR, which opened in December 2024.

This new spot in Hayama combines history, local ingredients, and wine culture. Interestingly, it stands on the site of the former Yajima Liquor Store, a beloved local institution with over 120 years of history.

The revival of this location was made possible through the passion of many individuals and a successful crowdfunding campaign. Now, it has been reborn as a landmark in Hayama.

In this blog, we’ll explore the team behind the project, the carefully crafted menu, and the unique atmosphere of this special venue.

Continuing 120 Years of History with a New Story

HAYAMA SHINNASE CELLAR is located on the site of the former Yajima Liquor Store, a gathering place for local fishermen, town festivals, and residents for over a century.

However, as times changed, the store closed its doors, leaving a void in the community.

Determined to preserve the history and warmth of this place, a group of dedicated individuals launched a crowdfunding project to bring it back to life. (See the crowdfunding campaign)

The project was led by Keishi Ono (@hayamashinnasecellar), who is passionate about preserving historic buildings in Hayama.

“We wanted to create a place where both locals and visitors can experience new discoveries and a sense of community.”

The project brought together many talented collaborators, including renowned chef and food expert Yumi Tsuchiya (@cafemanimani).

“We aimed to create dishes that highlight local ingredients and allow visitors to experience the true charm of Hayama,” says Tsuchiya.

Signature Dish: The “Bour-Tartar Fish Sandwich”

One must-try dish at HAYAMA SHINNASE CELLAR is the famous:

“Bour-Tartar Fish Sandwich” (¥1,600)

This dish features a massive serving of house-made tartar sauce, generously covering crispy white fish. The result is a delicious balance of rich creaminess and crunchy texture.

The sandwich is made with premium bread from Afro Pan (@afropan_hayama), a well-known local bakery.

Chef Yumi Tsuchiya (@cafemanimani) crafted the tartar sauce to perfectly complement the crispy fish, creating a luxurious and satisfying experience.

At HAYAMA SHINNASE CELLAR, the interior is designed to reflect both its rich history and the beautiful surroundings of Hayama.

Whether you’re visiting for a casual drink or a relaxed meal, the space offers a welcoming ambiance that invites guests to linger.

In addition, the concept of “角打ち (Kakuuchi)” has been incorporated, allowing guests to casually stop by and enjoy a quick glass of wine or coffee while standing at the counter.

The space is wide enough for strollers, and many parents visit with their babies.
Completely non-smoking, making it a safe environment for children.
While the ambiance is more adult-oriented, lunchtime is a great time for families.

Dog-Friendly Information

Surprisingly, dogs are allowed inside the café. There’s also an outdoor terrace.
Since Shinnase Beach is nearby, many dog owners stop by after a walk along the shore.
Takeout is also available, making it easy to enjoy their delicious food outdoors.
